Ingredients
  

  • 2 large chicken breasts about 1 pound – cooked and shredded
  • 1 cup shredded cheese cheddar, mozzarella, or a Mexican blend
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup diced onions optional
  • 1/2 cup diced bell peppers optional
  • Sour cream salsa, or guacamole for serving

Instructions
 

  • Step 1- Prepare the Chicken: Start by cooking the chicken breasts until they are fully cooked. You can grill, bake, or even use leftover chicken. Once cooked, shred the chicken using two forks.
  • Step 2- Season the Chicken: In a bowl, mix the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper. If you like it spicy, you can add a pinch of cayenne pepper or some hot sauce.
  • Step 3- Assemble the Quesadillas: Heat a large skillet over medium heat and add a little olive oil. Place one tortilla in the skillet, and then sprinkle a generous amount of cheese on one half of the tortilla. Add the seasoned chicken, and if you’re using onions and bell peppers, sprinkle them on top.
  • Step 4- Cook the Quesadilla: Fold the tortilla in half, pressing it gently with a spatula. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
  • Step 5- Serve: Slice the quesadilla into wedges and serve with your favorite sides like sour cream, salsa, or guacamole.
